The food gods must have taken pity on me after yesterday’s pumpkin fiasco. I’ve had a lonely jar of almond butter sitting in my cabinet and un-used jars of nut butters are a sad shame. Born of this disgrace? Almond Butter Cookies. 

Wet ingredients:

  • 1/4 c. butter (I used Earth Balance)
  • 1/4 c. almond butter
  • 1 egg
  • 2 tsp. almond extract
Dry ingredients:
  • 1 1/4 c. flour (I used an all-purpose and coconut mix)
  • 1/4 tsp. baking powder
  • 1 c. packed brown sugar
Heat oven to 350 degrees. Mix wet and dry ingredients. Form into small balls and flatten with a fork. Bake for 15 minutes. 

I’m inordinately happy these turned out. It’s the little things in life.
