You can’t go wrong with a big bowl of pumpkin goodness. Or even TWO bowls of pumpkin goodness.

I’ve been experimenting with oatmeal combinations and this particular mix has been hailed as the “best oatmeal ever.” It’s preeeety darn good. 

Pumpkin Pie Oatmeal (serves 2)

  • 1 c. old fashioned oats 
  • 3/4 c. almond milk
  • 1/2 c. water
  • 1/2 c. canned pumpkin
  • 1/2 banana
  • 1 tsp. cinnamon
  • 1 tsp. ginger
  • 1 tsp. nutmeg 

Mix all the ingredients and cook on the stove to desired consistency. Then top with whipped cream (which is a must!) and other goodies. Granola gives these oats a crunch that would normally come from the crust of a pie. The banana sweetens it up without being overpowering. And logically, everything tastes better with peanut butter on top. More, pleaseeee.
